What Happens To Steak When You Grill It?

 As the summer and barbeque season is in full swing in the Northern Hemisphere, it is as well to be aware of what happens to Steak or any other meat when you grill it.  Always keen to point out dangers and hoping to convey good informative and helpful information, I stress that it is always up to the individual to judge what is best for themselves.

  • The color changes that occur as meat is cooked are due to a protein called myoglobin
  • In red meat, myoglobin changes from red to tan and grayish brown as it is heated
  • Grilling leads to the creation of toxic cooking byproducts in your meat; these can be minimized by shortening cooking time, lowering temperature, and using spices and marinades
